Never ever have I seen any of my Jamaican family put scotch bonnet in coleslaw - here or in JA. I think it's cause coleslaw is meant to be that nice, fresh element to take down the heat of the chicken. Having said that, if I wasn't such a heat wuss I might try it

Good cheat addition to a jerk sauce? HP sauce. Weirdly. Has all those typical spice, allspice, fruit and sweet elements you associate with jerk flavours! Can mix with Encona Scotch Bonnet for a mad quick glaze.

We marinate in Florida for 5 days… grill over pimento logs… most in the world don’t have access to pimento logs but soaked all spice seeds thrown on the coals works too … usually served in Florida and Jamaica with plantains and macaroni pie… but Big Has has the basics going on!!!

Has, I love your vids but please consider putting the ingredients and recipe in the description. I was wondering through Sainsburys with your vid playing muted on my phone and closed captions on, scanning back and forth through the timeline trying to make sure I didn't miss anything! I know you probably want to drive sales of your book and I respect the hustle, but I'm not gonna buy it until I've tried a good few of these recipes, so making the recipes as difficult as possible to follow isn't gonna help. Respect.
