You need to come to Romania to Dedulesti. It's a place in Romania that became famous for grilling mici. It's nothing fancy. It's just a place on a hill where long ago, some people decided to grill some mici and sell them. Then a few other grills appeared right beside it. And now it's famous for their mici all throughout the country. So a bucket list place for the mici tour.

I don't think there's a Romanian that did what you did, and I want to thank you for setting an example for us about being more invested in our culture and roots instead of just running away from them. I couldn't find mustard at my local supermarket, so l ordered online! Yes mici MUST go with MUSTARD and pickled cucumber! I have made mici twice so far. Thanks to JLW for introducing mici in their vlog while in Romania last year.

Take beef from the neck, without removing the fat, and pass it through the machine twice, to shred it as well and as evenly as possible. If the meat is too lean, add some cow tallow or, in its absence, sheep tallow, as much as 100 to 150 grams for every kilogram of meat weighed. Boil a broth of cow bones with marrow, which drains well, from 500 grams of bones for every kilogram of meat. Spices and seasonings are prepared for each kilogram of meat as follows: 8 grams of finely ground fresh pepper 12 grams of finely ground dry thyme 4 grams of finely ground allspice 2 grams of finely ground coriander 2 grams of finely ground Turkish cumin 1 gram of finely ground star anise 8 grams of sodium bicarbonate 1 teaspoon of lemon juice 1 tablespoon of butter 1 good head of aromatic garlic and not the spicy one For quantities greater than five kilograms, for every five kilograms of meat, one measure more of the mentioned spices. Knead the meat in a suitable vessel for an hour, adding the sodium bicarbonate at the beginning, which is extinguished with the lemon juice. Half of the bone broth and all the other spices, except garlic, are added gradually, evenly and little by little. The mixture is covered and put in the refrigerator for a day and a night, after which it is taken out, left for a few hours to deflate and kneaded once more for half an hour with the rest of deflated bone broth. A garlic paste is made with warm water from one head for each kilogram of meat, which is left to steep for half an hour. Squeeze the garlic paste in a cheesecloth, add the garlic juice and knead the mixture once more for a quarter of an hour. It goes back to the glacier until the next day. About three hours before the mici are fried and served, the mixture is removed from the refrigerator to warm up and soak; after three hours or when the mixture has crumbled, form the mici about a finger long and about two fingers thick, grease them with oil on all sides and at the ends and let them sit for an hour. They are fried on hot embers of wood or coal, smearing them from time to time with mujdei(smashed garlic mixed with salt and water), so that they get a brown crust all around. Our grills turn each mititel only three times until it is toasted. When fried, the mititeis will shrink a little, hence their name, or that of small ones. Do not allow it to penetrate, so as not to dry out the juice that contains the flavor of the spices. If they are fried on too low a heat, the mici will shrink too much, dry out, lose all the aromatic juice and become dry.

The saying about the mici, that if they don't bark they are good to eat is mostly because there is a place in Romania, where they supposed to have the best mici in the country (Dedulesti - near Pitesti), the legend says that there where a lot of dogs there (mostly because of the restaurants), and at a moment there were not many left, so people thought that the mici are from dog meat - so there goes the saying that "If they don't bark back, they are good to eat"

Ivana, I have to teach you how to make mici ! Time of preparation is. 12 Hours. I'm Romanian but now I'm in Las Vegas since 32 years ago. You have to knead all compositions the way you do the bread dough. It's lots of work .After the first time kneading you Jane to keep the composition in the fridge. After six hours interval you have to knead again very good like you knead the dough. Then again in the fridge for 6 hours and again one more time you have to do the same thing. When you kneading you have to use beef broth. The meat of the mici has to stay tight when you forming the mici. Use the soup spoon to get the meet from the bowel. You should have used the romainan barbeque sauce alternative, Mujdei (homemade garlic sauce, you need 3-4 crushed garlic cloves, a pinch of salt, 1-2 tablespoons of sour cream, fresh juice from a fresh lemon to taste for a bit of mustardy saurness) Mujdei goes excellent with any grilled meat and some even prefer it over mustard if you put sourcream, for fish based grills you put a few tablespoons of water instead of sourcream.

This was such a nice video. Brought a smile on my face! Mici in Malaysia, who would have thought?! Even if they weren't perfect (the spices), the spirit of mici was present here! If only you had a bit of mustard 😍 I love mici, during summer in a park with mustard and a cold beer and some nice fresh bread...epic! As for Romanian sayings making no sense, one should definitely translate Romanian swearing :)) PS We also use the "sunt inca vii" (they're still alive" and "mișcă" (they're still moving) when the mici aren't well done :) Cheers guys!

LOL I don't mind saying this in our vlogs because most of our audience doesn't understand it. Mostly we are pretty family friendly on our channel and don't usually swear... but they only people who know what that means are Romanian, and our experience has been that Romanian people don't mind a little swearing, lol

It says you can use horseradish or wasabi as mustard substitutes, but of course use less of them. They're more fierce than mustard.

you cant substitute our mustard for mici with wasabi or horseradish! We eat mici with a sweet mustard or classic one! not a spicy mustard

You can cut in half a 2L plastic bottle and use the upper side. Put the meat in the bottle, take of the bottle cap and push the meet through the hole. About cooking: You need to turn them 4 Times - 4 rounds turning :) HF

If you all still at Sri Aman, you guys should go to 99 seafood shop. Try fried noodle(Mee goreng), kueh tiaw noodle(mee kueh tiaw), sambal noodle(Mee sambal), tomato sause noodle & even they also sell seafood

Hi, I hope you see my message regarding mici: There are many "original" recipes, all of them contains pork meat, and some other kind of meat (beef, sheep,veal) but also all of them have bone broth. Bone broth is a must in mici. Regards

You can use a bit of cooking oil or water on you hands to form the mici ... beer is making them puffy

Better than mustard with mici get "mujdei" which is a simple garlic sauce. Upping that add greek style fatty sour cream or yogurt to the garlic sauce
