When he said his grandma taught him how to make pizza and that she passed away 4 months prior, it was the only time he wasn't smiling in this whole vide. You could tell it hurt. Also, not many people realize how balanced a homemade pizza can be. Homemade being the key word. This guy reminds me of those old school Italian men that worked their butts off as masons on nothing but espressos and cigarettes and then would come home and eat two bowls of spaghetti and a loaf of bread.

The term never judge a book by its cover is literally tailor made for this boy. An elite world champion athlete and he might be the happiest person I've seen on a Joe Rogan podcast. You look at him too and I'm by no means disrespecting him when I say this......but if a fight broke out somewhere you wouldn't think he'd be much trouble for a lot of guys but he'd be able to have you tied up in knots on the deck in seconds. Fair play to the wee man 👍🏻👏🏻👏🏻👏🏻👏🏻👏🏻another belter of a podcast from Joe

It’s all about gli ingredienti. Italians eat pasta every day, sometimes twice a day. On average they are eating pizza once or twice a week. Italy has a national obesity rate of around 10%, compare that to ~40% in America. Similar to Mikey, I cook authentic Italian pasta dishes for my family almost every day (lunch or dinner) and Neapolitan pizza at least once a week. Bear in mind, classic Italian dishes don’t often use rich, over the top ingredients like heavy cream or butter. You have to understand, if you are cooking with artisan pasta, DOP San Marzanos, high quality hard cheeses like parmigiano reggiano or pecorino romano, high quality EVOO, organic herbs and spices, etc. you are consuming some of the healthiest, most nutrient dense food on the planet.
