It's a joke: If i put salt in too early ,turns the eggs little bit gray.I've made thousands of omelette in my life since my childhood and i'm 40 now,salted before i put in the pan and never got gray even a little bit.Besides this presentation on the plate is ugly,looks a student made it

Oooh thats a rather shoddy omlette! I like those neat little fresh quenelle shaped ones you get at the Peninsula Hotel breakfast buffet, all moist molten cheesy inside. His looks like a egg flop. Its not truly an omelette at all.

I'm sorry but I think Gordon Ramsay shows and his methods of cooking are a load of rubbish. You're supposed to butter the pan and shake it while you scramble the eggs not shake and then scramble it. That way the omelette will form small curds and turn out beautiful, soft and tender. And it should take only about 20 seconds not 2 minutes.
