Just made myself a cracking omlette. Went for 5 eggs! Salt and Pepper, grated mozzarella and spinach leaves. I also picked up some lovely chili sauce at a Chili Festival in London that comes from the Carolina Reaper, so a dash of that into the mix. Yum!

I have found that whisking makes a fluffy omelette but it doesn't necessarily give you that nice smooth texture in your mouth. I find not over whisking( ie with a fork) is the key. I have used jamie's omelette for a while and is still the best one i can cook.

Jamie Oliver's method doesn't give you one of those epic, perfectly fluffy and flavour packed omelettes you find in some rare diners or at grans, for me this method is perfect for the lazy cook, the one who just wants to make a decent, smooth tasting omelette after a tough day or crappy morning wakeup, without too much effort or needing much experience.

I know your post is old, but I thought I could maybe give others information. If you take a plate and gently put it into the pan and flip the pan (while you hand is on the plate of course. Also the part you eat on is down). Than take another plate put it on top (eating side to to omelette) flip the plates. Take top plate off. Take pan turn it upside down to the omelette and flip it. Get a good suction cup (one with a lever) to pull the plate out.

Your heat is to high. Lower heat. Baby your omlette. Take it off the heat bear the end and let the residual heat from the pan finish it off. It's very easy. It's actually harder to screw it up. Lol.

***** Hi Margaretha, The first mistake Jamie does, is throwing salt and peber into raw eggs. Salt in particular will start breaking down the egg, making it even less delicious, and in general just take away some taste of the egg. Salt and peber should not be applied, before the omelet is almost done. The second mistake, he did not cook it long enough. The silky feel in the middle is true enough, but his was actually raw.

dim pap If you live in a country with egg grading stations, there's little to no risk of salmonella. Omelettes are infamous for being overcooked in restaurants and at home. Most basic omelette instructions usually exclude cooking the top since most of the heating and cooking is done when you agitate the egg and break up the cooked portions from the bottom of the pan. Moisture does not necessarily equal raw. Someone like Gordon Ramsey (see: his basic chef test) would throw him out of the kitchen because it was overcooked. His temperature control led the egg to color instead of harden which took away from it's texture when done.

Easy, I did on it first try. Starting with full heat, then lower it + pulling it to the middle and refilling da gap is essentiell. Thanks to Olli I don't have a nearly burnt outside and an almost raw inside any longer.

I'd personally use a cast iron at home, but for the purposes of making this a "perfect" omelette for the show, he uses a teflon non-stick pan. I agree that he should not use a metal fork with it. In any case, Jamie's just awesome and he's the only chef who I really feel a connection with. I guess my second fave is Alton Brown, but Jamie is just tops. He's so intimate with his food, he really cares about what goes into it, the quality of the ingredients, and his personality is so fun, kind and sincere, and to be honest he's so cute and sexy. In addition, he makes an effort to get to know and befriend his fellow chefs and even the suppliers. Right down to the source. And if that weren't enough, he cares about getting people to learn how to cook at home, kids eating healthy, promoting home gardening, organics, and animal welfare. Can't get enough of this guy. He's just amazing.

I just read how to make a classic french omelette (melindalee(.)com) and it involves cooking with a fork. It's also suppose to be soft and creamy or as Jamie calls it, silky. Not everyone can afford the expensive fresh cheddar cheese. And not everyone wants to use hot sauce. Like Jamie said, we can use ketchup which is how I like to eat my fried or omelette eggs.

Because the egg white is a squishy liquid, it's difficult to fish tiny bits of egg shell out of it with your fingers or utensils. A half-shell is "sharp", and you can reach into the egg white without pushing the little bit away. Also, it's right at hand :)

I sometimes do, especially when I'm throwing spicy sausage and pepper jack cheese on it. Goes quite nicely with it :)

I watched this video late last night, attempted it this morning and got it PERFECT first time. Really don't know why people have such a hard time making this! All you have to do is follow EXACTLY what Jamie does and there you have it. Fucking delicious if I do say so myself.
