together with making an omelette, scrambled eggs are notoriously hard to get it right. Top chefs often ask aspiring cooks to make either of the two dishes to see wether someone is qualified. But to put that aside. I didn't mean any offense. I'm just passionate about eggs ;)

Just made myself a cracking omlette. Went for 5 eggs! Salt and Pepper, grated mozzarella and spinach leaves. I also picked up some lovely chili sauce at a Chili Festival in London that comes from the Carolina Reaper, so a dash of that into the mix. Yum!

An egg needs whisking lifting to get air into it , to get it to rise , this is just eggs cooked with grated cheese , this guy is so overrated

I have found that whisking makes a fluffy omelette but it doesn't necessarily give you that nice smooth texture in your mouth. I find not over whisking( ie with a fork) is the key. I have used jamie's omelette for a while and is still the best one i can cook.

Jamie Oliver's method doesn't give you one of those epic, perfectly fluffy and flavour packed omelettes you find in some rare diners or at grans, for me this method is perfect for the lazy cook, the one who just wants to make a decent, smooth tasting omelette after a tough day or crappy morning wakeup, without too much effort or needing much experience.

***** Teflon that has "no coating to make it non-stick"? Shows how much you know about Teflon and non-stick frying pans. Truly amusing. Every teflon non-stick fry pan manual is guaranteed to not recommend usage of sharp metal/steel objects like a fork on the pan. I wonder why? If Jamie should ever need to use his warranty for that pan do you reckon the company would grant it to him after seeing this video? I think not. All you are pissant is fluff and hot air.

I know your post is old, but I thought I could maybe give others information. If you take a plate and gently put it into the pan and flip the pan (while you hand is on the plate of course. Also the part you eat on is down). Than take another plate put it on top (eating side to to omelette) flip the plates. Take top plate off. Take pan turn it upside down to the omelette and flip it. Get a good suction cup (one with a lever) to pull the plate out.

Absolutely :) Simple dishes are often sublime when mastered. I love omelette but even a classic scrambled eggs on toast, if correctly cooked and given a little kick with black pepper, is an absolute classic and is certainly fit for kings : )

I just tried his method, it was brilliant. I had a wonderful omelet with a bit of sharp cheddar, serrano ham and a bit of tomato. Great breakfast.

Your heat is to high. Lower heat. Baby your omlette. Take it off the heat bear the end and let the residual heat from the pan finish it off. It's very easy. It's actually harder to screw it up. Lol.

I'd personally use a cast iron at home, but for the purposes of making this a "perfect" omelette for the show, he uses a teflon non-stick pan. I agree that he should not use a metal fork with it. In any case, Jamie's just awesome and he's the only chef who I really feel a connection with. I guess my second fave is Alton Brown, but Jamie is just tops. He's so intimate with his food, he really cares about what goes into it, the quality of the ingredients, and his personality is so fun, kind and sincere, and to be honest he's so cute and sexy. In addition, he makes an effort to get to know and befriend his fellow chefs and even the suppliers. Right down to the source. And if that weren't enough, he cares about getting people to learn how to cook at home, kids eating healthy, promoting home gardening, organics, and animal welfare. Can't get enough of this guy. He's just amazing.

yeh i have heard this also as it makes the eggs watery. i prefer to add seasonings once the omlette is cooked and served.. same with scrambled eggs. chef ramsay also does this.

Because the egg white is a squishy liquid, it's difficult to fish tiny bits of egg shell out of it with your fingers or utensils. A half-shell is "sharp", and you can reach into the egg white without pushing the little bit away. Also, it's right at hand :)

I just read how to make a classic french omelette (melindalee(.)com) and it involves cooking with a fork. It's also suppose to be soft and creamy or as Jamie calls it, silky. Not everyone can afford the expensive fresh cheddar cheese. And not everyone wants to use hot sauce. Like Jamie said, we can use ketchup which is how I like to eat my fried or omelette eggs.

....aha, that's what you mean...lol. No we all know that a god omelette can take much longer time. I remember once a chef made an omelette for me in the breakfast room in a flashy hotel down in Thailand and it took some 10-15 min.....that depends what he puts in it. But remember this shall help people...not being afraid of making omelettes...lol.

***** Hi Margaretha, The first mistake Jamie does, is throwing salt and peber into raw eggs. Salt in particular will start breaking down the egg, making it even less delicious, and in general just take away some taste of the egg. Salt and peber should not be applied, before the omelet is almost done. The second mistake, he did not cook it long enough. The silky feel in the middle is true enough, but his was actually raw.

I've heard not to use the half part of the opened egg to remove ant egg shells because of the bacteria on the outside of the egg shell, i use a spoon to fish them out.

Don't fold it in the pan. Hold the pan up next to a plate, tilt the pan towards the plate until the omelet starts to slide out on the plate, and when about half of the egg is on the plate, use the lip of the pan to flip the other half over. This is easiest if you tilt the pan so that the handle is directly opposite the plate.

I think you'll find some of the worlds top chefs are English and British and i don't mean call order diner line cooks. And as for the ketchup, you're from the home of ketchup consumption. Christopher, I don't want to start a fight, just... ketchup really isn't something a chef would use in his kitchen. I know, my family is full of chefs. And... it's funny how a Brit just insulted an American, because for us in Slovakia, you both suck in cooking :D (I mean not individualy, your national kitchen. The video says the perfect Omelette. What do you expect there? It doesn't say "The perfect fancy Omelette.". Just a simple Omelette. He didn't use Ketchup, he just said you can use it. If he makes a Hot Dog and tells people they can use ketchup, what's wrong with that? Nothing, right. So what's wrong with suggesting Ketchup in general? And well, he has a lot of shows, his videos have millions of views and he has a lot of great selling books. While you... just know a bunch of chefs, in slovakia, which means they can cook great Borscht xD Seriously, the slavic cuisine is one of the worst in the world and being a chef there means nothing xD I'm a Slav myself.

Kemal P. i agree it must be cooked both sides and then you can add the cheese and fold it so that it melts better not that uncoocked stuff!!!

dim pap If you live in a country with egg grading stations, there's little to no risk of salmonella. Omelettes are infamous for being overcooked in restaurants and at home. Most basic omelette instructions usually exclude cooking the top since most of the heating and cooking is done when you agitate the egg and break up the cooked portions from the bottom of the pan. Moisture does not necessarily equal raw. Someone like Gordon Ramsey (see: his basic chef test) would throw him out of the kitchen because it was overcooked. His temperature control led the egg to color instead of harden which took away from it's texture when done.

i suck at making omlettes. but i found out if you stick it in the broiler for a couple minutes it cookes the egg all the way threw then add your cheese and stuff then fold and serve

Tefal non stick pans have Intensium coating that promises extremely high scratch resistance, allowing you to use metal utensils.

Exactly, it's definitely not teflon. Teflon is not by all means the only "non-stick" surface there is for cooking. It's probably made of a similar material the authentic Chinese woks are made of, cause it sounds alike when he scrapes it with the fork.

They make scratch-resistant teflon cookware, which is what professional cooks use. Ofc they are more expensive than your regular non-stick pans. Naturally, you should use wood utensils on those.

i love using metal utensils on my nonstick pans. the teflon that flakes off seasons the omelet just so nicely.

I learned how to cook omelettes with a gourmet chef at a holiday brunch my parents always dragged me to. He had me serving them after about 10 minutes haha! Love to do it with onions, shredded colby jack and some lunch meat ripped into tiny pieces.

i just did my 1st omettle last week for my wife.. did it the jamie was showing.. i added turkey,onions,tomatos,salt and peeper.. flipped it on one side.. and perfect!!!

About the shell-pieces in the bowl; try the Jacques Pepin techniques, just break the egg on the shelf.

Easy, I did on it first try. Starting with full heat, then lower it + pulling it to the middle and refilling da gap is essentiell. Thanks to Olli I don't have a nearly burnt outside and an almost raw inside any longer.

@cronin098 I'm no expert in cooking, but there's the difference that with scrambled eggs you can season them any time in the cooking process whereas with an omelette you can only season it in e early stages

no they dont, just very very lightly, which does not remove salmonella, almost every egg is contaminated. cleaning actually reduces the shelf life of eggs, because it destroys a special membrane that keeps organisms like salmonella out. also: you need an amount of at least10^4, more likely 10^6 salmonella per gramm food to get sick. to reach that level you need to make something like tiramisu and leave it at room temperature for a day, no problem at all with omlettes or boiled eggs
