Very nice set up, appears very meticulously thought out and executed. Was this new construction or renovation? If new construction, what was the motivation for a 14’ ceiling? Love the line storage idea, is that a custom build?

It was a new build and the door is 14' and the ceiling height is 16' with the anticipation of a larger boat. The line holder was a result of some scrap wood and a six pack...lol

Your brine vinegar mixture for soaking the fillets can you give the exact measurements?

Well it is not exact, but I normally will use a few table spoons of apple cider vinegar with a 1/8 cup of salt (maybe less) in a gallon of ice water. I find the key is to be sure to dry the filets before vacuum sealing them the next morning.

We have the main at 30' x 44' x 15' with 14' x 14' doors. I have another at 36' x 50' x 22' with 18' x 18' door & 14' x 18' door.
