I think Lydia is Beetlejuice's soulmate for the afterlife I think a third film would better explain it as this film is not wrapped up by any means, Delores killed him to be with his soulmate little realising that would be his final destiny then that would a fitting end to the character if he was to marry Lydia at the end.

It’s Tim Burton’s dog. Was added as a little joke because Tim says his dog is one of the loves of his life. ❤ This info was in an interview with the editors of the movie, I think it was. They had suggested to make the scene shorter but Tim refused because it was his vision, he wanted this moment to last the entire song if possible, so they came up with ideas to make the sequence more interesting for the audience. It’s adorable they included the doggy 😊.
