I think you are right about the mustard powder, it looks like Coleman's powder mixed with far too much water. It's great when mixed with malt vinegar .

We don't mash the potatoes for chips, just peel them, cut to size and double fry them preferably in beef dripping. We sprinkle salt and vinegar over the whole meal (used to be served in newspaper) and some like ketchup or tartar sauce with it and of course you would have bread and butter and a cup of tea with it if eating from a plate. The best potatoes for chips are the Maris Piper variety.

Hey Joel, wonder why you call the Chips "Mashed potato sticks"? Chips are cut from whole potato, pre blached either in water or oil, then fried 1 or 2 more times depending on who makes them, but they are certainly not mashed. It's the blanching that gives them the soft fluffy texture in the middle

“Wet” English mustard has water in it when mixed from a dry powder. There is a recipe on Coleman’s website. We make it as a dip for Snyder’s sourdough hard pretzels.

@@briandoile5011 Exactly 2 pounds of fries that are just getting colder as you go. As a human they are going to be terrible before you even get close to being halfway through. That's a ton of starch. No amount of watery mustard, ketchup, vinegar or even tartar sauce is going to save you from that much cold fries.

They are not mashed potato sticks but chips made out off potato by peeling a raw potato then slicing the potato into chips. Unlike fries which are made from reconstituted potato

Our chips here in the UK do not have mash in them. The consistency depends on heter they have been soaked to remove more starch before cooking, then go through a process of being fried 2-3 times to get the fluffiness and a bit of a crunch.

That looks like a lovely piece of fish, but I would say that haddock is a better fish to eat when it's a fish and chip situation. I live in the UK and I love this dish, but I have to pour so much vinegar on it that it turns all brown and mushy. Yum. Pity about the peas though, should have been mushy.

Cod is a no no in our household. We are #1 halibut #2 haddock for fish and chips. I live on the east coast of Canada and nobody eats Cod, excepts Newfoundland. They are full of worms. Well done Joel, another great video. Hope you enjoyed your cruise 😊

You make up the powder form with water into a paste with the same consistency as the jar. I actually find it hotter than the jar form... the powder comes in small yellow tins.

Speaking as a British person, that definitely isn't English mustard Joel, you can tell by the colour alone, that has more the colour of French Dijon but no mustard should have that liquid consistency! You're probably referring to Colman's Mustard (Of Norwich, Est in 1814 & bears the Royal Warrant) bright yellow in colour. They do look like proper Chippy Chips and although I personally don't like Mushy peas, ordinary peas are a usual side with traditional Fish & Chips. Haven't tried your Tartar sauce/Ketchup blend with the fish but will try it. I spread Tartar sauce on the fish and have Ketchup on the Chips. Another win Joel, keep up the great work & content! 👍

Chips………. Like chips of potato fried in oil. Thinly sliced potato’s fried end up Crisp……. or Crisps. Belgians used to do skinny sticks of fried potato and speak French (mostly) - so they got called French Fries. In France they are called Pomme Frittes……… And, those peas would be called “garden peas” in England……… although, if they are young and tiny, we go all French again (who knows why 🤔) and call them Petit Pois……. little peas….. Mashed potato sticks infers they are formed from mash, when they are merely cut thicker, stored in water (with a product called Dry White) then deep fried in oil. (Yes, as a lad I used to work in a Chippy) 🇬🇧🙂
