I feel like all of them should of been longer and Gruama shouldn't of existed. The missions feel forced and too structured just to make sure some stupid island works for a hour and the story perfectly matches the original, because Rockstar is afraid of making original content (RDR remake)

Yeah, John Marston causes Arthur, "Arthur Morgan." Arthur then proceeds to say that he meant his son the sherrif, but Dutch told Sherrif Gray that Arthur's last name was Arthur Callhan. Given Arthur has a bounty of 5k on his head, it makes sense as to why they figured out who the Van Der Linde Gang were or at least found out these guys were dishonest.

Gray’s voice reminds me of Leo Galante from Mafia 2 and John Gravelli from gta 4

Actually, these horses are overpriced by Tavish. One horse costs at least 1250$. And no one in the state has five thousand dollars for one horse, and 15,000$ for three. So, he lied, and they cost four times less.

During this mission, you can tame a black Arabian horse, and it will stay close to you when you complete the mission, if I'm not mistaken.
