hes right about what he says about his 'practicing', but its just relative pitch. If he got lessons his actual technique would not be working against his playing to anyone with intermediate to advanced experience... 'the notes' are not difficult to learn!!

How does John spend so much time messing around on piano and not know the notes?

He means being able to play by feel so that his hands can translate what his brain wants. He's pretty good at it in the video, but when he says he wish he knew the notes, he's referring to a very high level of connection to the instrument, like he has with guitar. When he plays guitar it's like there's nothing between his mind and the sounds that come out the instrument.
