To Be All Things (the final boss's first form) is also great and underrated. To say nothing of the music from IV - the 4 final boss themes are all great, and the fiend theme is severely underrated. (It's reused in IVA in Twisted Tokyo.)

Maybe the one in the first dungeon of Strange Journey Redux, but it's not bad. Now that I think about it, a bunch of my favorite turn-based RPGs have incredible boss themes - often better than their battle themes. The whole Paper Mario series has some awesome boss themes.
