Hi, I hope you're doing well! I'm really confused. How we can add positive charges since electrons are negative and protons don't move??

You're right, and the red positive charge that he drew doesn't represent protons at all. Only electrons are added on the bottom plate - that's the movement when the capacitor is being charged. Now because electrons from the top plate are being pulled from top plate to the bottom, it's as if the electron deficiency creates an increasing "positive" charge.
