I made this last night. Let me tell you, these buns are flipping amazing. They're giant too. I tried making a pound of ground beef equal six patties to match the amount of buns but the patties were obviously too small lol. The only down side is I usually love thyme, but being pregnant I think the flavor was too strong for me, so unfortunately I didn't enjoy the flavor as much. But I am eating the left overs for brunch, and duuuuude the sauce "spread" is even BETTER the second day after the flavors have sat in the fridge overnight, I was even dipping my cold fries in it. 😂 This stuff is way better than in n outs spread! I'm so happy I can make it at home now. Next time I think I'll have my husband make the patties, but either way this was delish! Thanks for the recipe. 😊

Directions for burger buns: 1) Mix yeast with milk (98 degrees F) 2) Mix salt, sugar and flour together 3) Combine roux ingredients in small pot, whisk together and mix over medium heat, stirring constantly until thick consistency is achieved 4) With mixer on low, add yeast milk to flour mixture 5) Add egg and egg yolk to mixer 6) Add roux 7) Mix for 2-5 minutes until dough is smooth 8) Add butter, one tbsp at a time 9) Mix for another 2-3 minutes until thoroughly incorporated and smooth 10) Shape dough into ball and place n greased bowl. Cover and let sit for 1-2 hours (or dough has doubled in size) 11) When ready, punch dough to deflate it 12) Dump it on lightly floured work surface and divide into 6 pieces, each weighing 95-105 g 13) To shape, turn upside-down, fold each corner into center, then flip (seam-side over) and shape with palm on hand on work surface, until a tight ball is achieved 14) Place them on a baking sheet lined with parchment paper and cover 15) Let proof for 45 min to 1 hour in a warm area 16) Lightly brush with egg wash (1 egg + splash of water) 17) Bake at 375 F convection (or 400 F) for 17 minutes (or until golden brown) 18) Immediately brush with melted butter and let cool

I made this today and no kidding it was the best burger I ever had! Especially the buns which never turn out too great for me, these were amazing. They took me a long time but it was so worth it. If you try something from this video, please try the buns and caramelized onions. Made 6 burgers and everyone loved them

In N Out burgers are consistently the same Good, never had a bad one except one time it was too salty. I only craved one once. Almost any burger prepared at home is better. Yours looks so good especially the sauce. Living within 15-20 minutes of seven locations probably has influenced my opinion due to the ease of eating one at any time. Oh crap! Now I want one.
