Absolutely correct! George hasn't forgotten with whom his base consists, i.e. the poor or middle class. One's pallet, no matter how refined must be curtailed to those with whom are your audience consists of. i.e. the majority of ones viewers. Never forget were your audience comes from. Good old army phrase is “keep it simple stupid”, which basically means adding extra bells and whistles doesn’t mean it’ll work better. I really enjoyed this episode and I REALLY look forward to seeing what food you make next!

My old man made burgers for a fishing trip when I was super young it was mustard, pickles, and onion. The burger was cold and been sitting around in an ice chest for hours. I don't care for mustard and onions typically, but to this day, 44 years on earth, that burger is in the top 3.

I add a chestnut duxelles to my burger meat. It does three things for me 1. You get mushroom, garlic, shallots, and a nutty flavor that adds to beef instead of overpowering it 2. The duxelles will absorb some of the fat which makes it nice and juicy. 3. I get a uniform bite without toppings going all over the place.

It is unobtainable where I live. As is the famous 'Hawaiian' buns you hear about, They just don't exist here. We do get really good buns that are called kaisers but which are not especially crispy crusted and not chewy at all. Their only drawback is they are 6" across, so your burger cannot be two patties lest you actually die trying to eat it. They toast beautifully, and can be found with poppy seeds, but not usually sesame seeds. they bear very little resemblance to actual kaiser rolls, which also exist here, but they sure are delicious. Biggest problem with them is they are like baguette in that they are stale in 12 hours.

My favorite is also variation of the Oklahoma smashburger. Bottom bun, spread of caramelized onions, bottom smash patty, cheddar cheese, top smash patty, american cheese, pile of stringy grilled onions, yellow mustard, top bun. Making proper caramelized onions is time consuming, so I make them in relatively large batches and freeze them in ice cube trays. I add a little beef broth so they come out of the trays easier when frozen.

I agree that a simple burger with minimal ingredients is best. Cheap potato bun, 80/20 ground chuck, American cheese, grilled yellow onion, dill pickle, and a few dots of classic yellow mustard on the patty while cooking. Viola! The perfect smash burger.

For my burgers i go with whatever bun i can find. Something brioche adjacent prefeerably as low on sugar as posible. For the sauce, i go with ketchup, but a very small amount, add a little touch as in your mixed sauce, but without the other things. Now, the meat... It's very rare to find fatty beef in my parts, it's always lean veal in our butchers and grocery stores. So i have to go with what we have, i do add some butter or extra virgin olive oil to the pan, and i like them thicker. For the cheese, i go with a combination of provolone for the meltiness and aged cheddar for flavour. For toppings, i tend to skip them, but when i don't it's sliced tomato and/or a fried egg.

So first off, if you are a burger person and not just that chicken nugget at Chilis kid who only eats one thing, you know there are different perfect burgers. Some burgers are AMAZING with cheddar cheese. Jack n the box puts different "color" cheeses on their burgers and they're pretty great. Different burgers for different situations.

Fully agree. Sometimes you want the greasy almost no toppings smash burger, sometimes a thick medium cooked patty with all the toppings and sauce. Sometimes raw onions, sometimes caramelized. In the end a burger is a sandwich and more of a concept than a specific dish.

Weird to see Motz's perfect burger at the end. My favourite fast food burger at the moment is from a place called Freddy's (not a massive player in the market, I don't believe...). Their basic double which is what I get is simply: two smash burger patties, american cheese, pickles, onion, mustard...and a normal (potato?) bun. They serve it with a drink and excellent thin fries for $9...which is a reasonable price for what you get. They have sauce on the side called fry sauce (the jalapeno version is excellent). It's amazing that the simplicity won me over. It's just a good burger without being fancy/crazy/etc. I know they sell other burgers, but their basic double is just excellent every time I've been.

Of the drive-thru chains Freddy's Frozen Custard & Steakburgers is my favorite too but for about the same price I can go to Texas Roadhouse and get their lunch special (mine opens at 3pm M-F but 11am weekends). More meat and thick fat steakfries (skinny or fat I don't think there is such a thing as a bad french fry). I can sit down at a nicer table and get served instead of standing in a line of parents with screaming kids or in my car breathing the exhaust fumes of the car in front of me. Relaxing if I'm there when they open, before they get crowded.

You bring up a really excellent point here. I live in NYC and I’ve been to Hamburger America a few times - - it really is pretty spectacular. It’s like having a burger that’s just what a burger IS. And what I realized is that bacon is a crutch. Bacon is just great on its own, and covers up a lot of mistakes in cooking. That’s why the fast food chains are all so bacon crazy, it’s covering up the fact that their burgers themselves are pretty terrible.

For everyones information: Cheddar does not melt, it sweats. The oil it secretes is the flavor of the cheese, but that's okay on a burger you just have to know what you're doing. By merely allowing the cheddar to sit briefly on the cook surface atop the patty the cheese will soften, you'll see the edges dip, and that's perfect. The oil will have sweated but it won't escape the burger Josh fucked up the cheddar by melting it, a LOT of the flavor is going to end up running out of the cheese and across the cook surface if you melt it under a bowel (aka the flavor). This is why when we make mac and cheese we melt the cheddar into a medium (usually creme) to capture that oil and all that flavor that the cheddar has.

Before I make this comment. I will say, I absolutely loved this video. However, Joshua, you dropped the ball on this one. George is a master of burgers, and as several other people said, you basically talked the entire video, and in my opinion did not take much consideration into George opinions. I will say, you started and continued with through-out the video saying, “my ideal burger” so, with that being said I do understand. I just personally feel like your ego really showed.

George comes on screen for the first time at 0:08 anf the first time he speaks is at 0:51 - thats 43 seconds from introducing him before he is allowed input. I know its your show, Josh, but maybe the script of the introduction or explanation of the concept could have been split up better.

I am convinced that there is not a SINGLE perfect burger, but there are best in class for the different patties. Both of yours look fantastic, and I will have to try to make them both.

Georges burger, No cheese on the top pattie. i flip the top bun after being toasted to toast the top of the bun. That is when I put the second slice of cheese on the top bun to seal the toasted inner keeping the sauce from soaking into and sogging the bun. 80/20 with a razor thin slice of onion under the cheese on the bottom pattie to keep it from sliding around. (Plain unseasoned typically, but will occasionally mix Montreal Steak seasoning into the beef) My sauce is a 50/50 mix of Heinz Ketchup and Gulden's spicy brown mustard! With Doritos' Sweet and Spicy (purple bag). Lemonade or Dr. Pepper! Perfection.

I agree with everything - with one exception: the addition of Hatch green chiles (or jalapenos in a pinch). I absolutely love green chiles on a burger. If I'm hung over, give me a runny egg as well.
This was an interesting video. One topic that was missed that I would like to have seen when discussing the perfect burger is the best cuts of beef. I would like to have seen a comparison between 75-80% lean chuck, brisket, and short rib with a few beef blends to see what the optimal cuts of beef to use in the perfect burger are.

Potato bun, thick grilled patty, American cheese, mayo, sliced pickles, sliced onions not cooked, and sliced tomato. That to me is the classic grilling outside watching a football game with family and neighbors cheeseburger. if you really want to make that patty special though what I do is mix the beef with partially sauteed onions&mushrooms (both diced), southern flavor cajun seasoning &charbroil seasoning, and if necessary for the sake of firmness you can mix some egg and breadcrumbs into it. Totally optional way to make the patties and you might not like it but I recommend trying it

American cheese, mild sweet onion, Heinz mustard is a combo I really love. It's so dang simple, but so good. I also like American cheese, mild sweet onion, lettuce, tomato, mayo combo. Pickles are great but they have to be the the perfect flavor and thickness or it takes away from everything else. I absolutely love pickles on a burger but usually order them without because it's usually too think or not the right flavor lol

When I was a kid growing up in the 60s we'd go to Santa Monica Beach where there was a hamburger stand that had the best burgers I've ever eaten, and it's not nostalgia. Mustard, pickle, onion, the way I make them to this day. Some things can't be improved on.
