Eh. For me, nothing will ever beat a simple greek style salad where you throw cucumbers, tomatoes, red onion, optional peppers, feta cheese and olives in a bowl and then just salt it and douse with olive oil and balsamic. So simple, so damn good.

Ok so, make a salted garlic paste, add one anchovy. Then add that to a mixing bowl with one egg yolk, Dijon mustard, juice of one lemon, pepper, then slowly whisk in oil until it’s an emulsion. Then add grated parmesan cheese. Just in case anyone missed it.
