Had a teacher who cooked a little alligator for a class. Salt, pepper, sauteed in butter. It was fabulous! Even my friend who was a SUPER picky eater liked it. Just a bite each to try it, and the store that carried it closed after a supercenter moved in. One of my favorite memories from high school in Missouri USA in the late 80's.

Late comment from Ontario, Canada. We have an exotic meat market close to me on a bison farm. We’ve had many exotic meats, ostrich, kangaroo, alligator as well as locally sourced bear, moose, venison, partridge, duck, goose, rabbit and bison. Very, very good. Alligator was delicious seasoned, grilled and topped with sweet chilli butter.

So I know I’m late, but I am from Florida, I helped hunt and cook Gator, you need to do a saltwater marinade for 48 hours, then you need to pull the tail meat and make a barbecue almost, a thin vinegar based bbq sauce makes it amazing and it is super tender, if you want more flavor and even to add texture you take the meat out of the salt water bath dry it , pull the meat, throw it in a mustard based bbq sauce or just straight yellow mustard not Dijon, then do a double dredge deep fry. The meat is insanely tender when bathed and pulled and the deep fry and mustard sauce adds so much texture and flavor also SEASON THE MEAT HEAVILY you do not want to see the meat when you season it Cajun seasoning and multiple spicy and flavorful seasonings think Louisiana if you ain’t sneezing it ain’t seasoned
