I love coconut rice and here’s how I made a fail proof one all the time.
List of ingredients
Rice 4 cups
1 red bell pepper
3 Long paprika pepper ( or 6 small shombo )
1 large onion
Yellow pepper & scotch bonnet to taste
8 tablespoons coconut oil
2 smoked cat pepper
1 tablespoon of thyme
Seasoning cube to taste
2 bay leaf
1 tablespoon adobo seasoning
Spring onion ( optional )
You can add crayfish but i wasn’t going for that

The use of crayfish in certain rice dishes points to regional flavors particular to certain areas in Nigeria. So, not everyone uses it in rice. Use ground Louisiana shrimp in place of crayfish when preparing other Nigerian dishes that call for it, since the flavor can be harsh especially to those unfamiliar to it. Furthermore crayfish is nothing but a local organic ground shrimp anyway. Personally I start my coconut rice with a sweet onion, carrot & sweet pepper mirepoix & follow through using a seafood or lobster bisque with roasted garlic, plenty of white pepper & pink peppercorns as a base for my coconut rice. A few very tiny dashes (it over powers quickly) of freshly grated nutmeg to finish the pot off towards the end of the cooking process, lends a huge burst of welcomed aromatic yumminess!! My point: DON'T BE AFRAID TO EXPERIMENT
