*HI MEXICAN PERSON HERE!* huge fan of pozole as well lmao, my abuela has a recipe really similar to Julien's so i asked her to give some advice! -add cumin and pepper to the adobo part (for more flavour, toast the spices as well on a pan, just a little), also, de-seed the chiles first, it's easier than dee-seed them already hydrated -instead of cabbage as a topping, you can use some lettuce, and radishes in cubes help too! -try to use tostadas instead of tortillas, crunchy helps with texture and also flavour (you can use totopos) we don't put cilantro but will try next time, sounds delicious. It's really nice to see somebody who doesn't usually eats autochthonous food try it, Pozole is really old in mexican and mesoamerican history, it was made by the mayans for the rich people when they sacrificed people to the gods and they actually used the meat of the tribute, so it uses pork now because apparently pork meat resembles nice to human meat. im really looking forward to Julien's next recipe!

I'm mexican, but I became vegetarian 3 years ago, so I haven't eaten pozole in a while. I miss it so much. Now I'm gonna give it a try, but instead of Beyond Meat (we don't have that in my tiny town), I'm going to use some mushrooms. Julien's excitement to try new cuisines is contagious, I was grinning the whole time. If you do add too much spice, a dollop of sour cream will help cool down the spice. I also eat my pozole with a slice of bread to sop up the broth.

As a mexican, that looks amazing !! (I was a little worried at first ngl) Some pro-tips to enjoy future pozoles: tostadas have more flavor than tortillas, lettuce is better than cabbage imo, and you can add a little oregano at the end or some chili powder (to your bowl) to add more flavor (as you did with lime, it's so good right?), and if you can handle it... add MORE chile/adobo to the soup oh yeah

I always cook two recipes in big batches for a few weeks and then I just freeze it. This week I did tikka masala and (traditional) Bolognese sauce. All you have to do take it out the freezer in the morning/afternoon & boil your rice or pasta when your ready to eat. Oh and heat up the sauce.😅

Just a tip incase you decide to make this again: Take the stems off the dried chilies and take out the seeds BEFORE you add the hot water! Also, your pozole looks really good!

I wanna make this so bad 😭 my mom hasn’t made me pozole in like 7 years because she didn’t think that it would be that good without the caldo de pollo but I hope we can make this together! Just a few notes: you can also add oregano as a side dish. We use dried oregano, it adds a whole lot of flavor. We also eat it with Tostadas instead of tortillas just because they’re crunchy and are a nice contrast, they’re gluten free and are just like tortillas but crunchy! When you make tortillas you should consider adding a little bit of olive oil. It helps the masa come together a whole lot better. When you cook them you want to make sure they they inflate like a balloon, I didn’t see this happen with you’re, probably because the clip was short, but something that can help with that is making the tortillas thinner. My mom probably does 2/3 of the masa that you used to make the balls and then presses it well. You want to be able to see the light through them but they shouldn’t be transparent. This will make the tortillas really nice and soft and a good way to know that you made them right is that when you fold them, they don’t crack/split. They stay whole until you tear them!
