I’ve notice this in a few different videos with baking in it. When you use brown sugar you are using European brown sugar which is just sugar in the raw. American brown sugar is white sugar with molasses in it, it adds an extra dimension to the flavor that would be noticeable.

As soon as you said white chocolate I knew you wouldn’t like it after adding sugar lol. White chocolate is so sweet. Also your cookies will come out must better if you let the butter sit at room temp instead of melting it. They don’t pool out as much and your second batch came out darker because your oven was hotter. Just some baking tips I learned the hard way also 😂

Try an unsweetened white chocolate maybe. I'm not big on really sweet things either. So I use unsweetened white chocolate or low sugar chips when I bake.
