I've been making a standing rib roast from her recipe in this EXACT manner for the past 25 years on Christmas Eve, it's the absolute BEST, as I knew it would be because it's her recipe!

I know I'm like the thousandth person to say this, but with all the memoirs and movies and competitions being created, her two "Company" series still have never been issued on home video or shown on any channel or streaming service.

Where there is demand, eventually, there will be a supply. Wish that whoever owned the copyright would allow all of her shows to be aired so we don't have to rely on 30, 40 year old off air recordings anymore! :P

@@JsClassicTV I sure hope you're right. Literally all her other series seem to circulates still. There's a whole dedicated "Julia" channel on Pluto TV, but it doesn't include this. Meanwhile, thank you for making these available.

This takes me back to watching this episode new as a teenager, in the days before cable TV took over. She was an entertainer first and a cook second. Some things she made were pretty exotic, although this dinner looked great. But, she was always fun to watch, with the perfect touch of humor. I stole her quote from the moment I heard it, "If she don't like it, she's never gonna darken my door again"!

Interesting that Julia recommends roasting the beef at such a low temperature, 325 F, which is only around 160 C. I am going to try that. Also that she doesn't season her rib roast before cooking - not even with a little salt, saying she feels it makes the juices run out. I'm not convinced. I tend to subscribe to Nigella Lawson's view that raw meat left unsalted before cooking is invariably revolting!

I could never put it in the oven without seasoning. Lots of salt, pepper, dried thyme and rosemary for a delicious crust;

Here we call that ‘Standing Rib’ or as Julia said ‘Prime Rib’. Here best recipe I know ‘Superior Rib Rack’: rub w/vegetable or olive oil, sprinkle salt, cayenne & pepper. 500’F preheated oven 5 minutes per lb. Turn off oven & don’t open til total time 2 hours. Remove & loosely tent to rest :)

The plea for money from the WGBH Station staff reminds me of watching public television when I was a child. I had no money to send them. They always asked for money, and I never knew what to do, because I did not have any. There was, apparently, a lot of gossip that I was rich. It was not true. I had very literally no money. Nothing. I had not even one dollar to my name. My mother would abandon me home alone with no money, all weekend long, while she went out for pizza and beer with her boyfriend. She always had money for tobacco for herself. So, I would spend all weekend home alone, watching television. We had no food in the cupboards, either. Usually some rotten lettuce, some bagels, ice cream, butter, and nothing else. I watched lots of public t.v. until they went off the air every night Friday, Saturday and Sunday nights.

Does anyone know where I can find the early 70s (maybe late 60s) Julia Child cooking shows? They used to be here on youtube, but I can't find them anymore. They were in color, and she was on a different set than the one here, and the one on her original black and white TV series.

I know some of the French Chef from 1970's are out there, but I don't know about early 1970's. As I recall, French Chef and Julia Child & Company were both still on the air in late 1970's. I used to wonder as a kid why she had 2 different shows.
