Never cut chillies with knife. Instead of that use ✂️ to cut chillies. And to get rid of burning sensation aply coconut oil on effective area.

You need to ask your MIL to install an exhaust fan in the kitchen and keep it on while cooking. That way she doesn't need to breathe in the spice in the air. Also, to avoid tears while cutting onions, after you peel out the skin & cut off its top & base, you can wash the onions in water properly once or keep them in water for sometime. That will help to reduce the chemical (I guess Sulphur) that it emits in the air while cutting. You need to rinse your hand immediately with soap once you touch chilly. The burning sensation generally happens when you don't wash your hands for long after touching the chilly.

If you have handled green chillies or red chillies directly with your hands, just smear some tamarind extract all over the affected areas and then wash your hands with tepid water (not warm or hot water). Then, Towel dry your hands and apply some soothing hand creams. I just apply Nivea. If you still have to continue your cooking following the incident, then apply some ghee instead of hand creams. This way, you do not have to wash your cream smeared hands again.

Rub the salt in ur finger tips until the burning lesser( even if the salt dissolves keep your hand under water) Agar hath mirchi ki wajah se jalane lage to bartan me pani lekar usme 1 chamach namak dale fir usme apne hath dal kar us namak ko pani k ander hi ungaliyo pr masale jab tak jalan kam na ho jaye masalte rahe

When you were separating the chillies with bare hands, I was like " isn't it gonna burn later?"😂 So, to avoid the burn, apply some coconut oil on hand before touching the chillies, and after using the chillies use some milk products to avoid the burn, like yogurt or just milk, and obviously wash your hand with soap immediately for like 3-4 times, and if your hand still burns, you can apply some yogurt like a ointment, or you can also apply coconut oil, which works slower than yogurt.

You need to wash your hands immediately after touching chilli. The burning sensation often occurs when you don't wash your hands for a long time after touching chilli, if this sensation occurs then you can either put kneaded flour on your hands or you can also apply aloevera gel.

Indian cooking is quite awesome as we use a lot of spice powders. Different states will prepare a dish in different ways, tastes different. One has to get used to our cooking. Cooking with spice powders should be done at the end as the dish looses it's nutritional benefits. There are many videos now put forth by people from different states. If one gets the hang of it one can use two fingers pinches of masalas and the dish comes awesome as there is a lot of difference with using spoons for small quantities.
