Her cooking was and is for the regular person who wants to elevate their cooking skills and most importantly who wants to eat delicious homemade food as opposed to processed junk. We need more people like Julia today. Butter and lard are so much healthier than seed oils. Listen to Julia people. I’m always amazed at how humble and non-pretentious she is as opposed to some of the big heads that call themselves chefs nowadays.

The chefs today seem to think you need fresh herbs, she used dried. Of course in that time, fresh ones were not as easily found in the USA.😊

Make Fricassees often; usually without wine, just stock and prefer to remove the bones (except drumsticks). Quite quick and easy.

I'm British, and we never saw Julia Child over here. What a lovely lady! An antidote to all those narcissistic and snobby (usually male) chefs who just want to show off but take all the joy out of cooking.

every week we made beefaroni in one, so tomatoey, cheddar cheesy, mozarelly and parmaseany with grade angus beef....my mother went to Gold Star kosher Butcher in West Miami, Fla....ahhhh the good old 60's & 70's
