Red bell peppers are the most nutrient dense. They are also the easiest to digest as they are fully ripened and are considered the most versatile one for cooking. Julien's gotta try purple bell peppers now. They are very similar to green ones, but I personally get a slightly different verdant flavor from them.

Pretty sure green bell peppers are the most versatile; red is the most used in Western cultures. It also heavily depends on the dish you are making. When I see someone making beef and peppers, I NEVER see anyone with the right to call themself a "chef" using red bell peppers--they are always green. Red peppers do indeed have more nutrients. However, they are also the sweetest. Some people simply do not like sweet peppers; this is also why it is not used in many dishes. Red is versatile in Western cooking, as it is often a little sweeter (or uses sweeter ingredients), but a lot of cultures use green.

@@nomoretwitterhandles In most of the restaurant kitchens I worked in, red was almost always preferred. The sweetness helps them when they cook down. I don't know what dish your beef and peppers is, because Italian beef sandwiches usually contain all the colors, the Chinese dish pepper steak has many colors, steak au poivre is peppercorns. I did a quick Google and the only version that is just green peppers and beef is from Cowboy Bebop.

okay okay to back up julien, I agree with him about green bell peppers for cooking because many dishes, like Cajun and Creole ones, start with the Holy Trinity - green bell pepper, onion, and celery, and it does make for a good flavor base. And I agree about red bell pepper being too sweet for certain dishes and the flavor is SO overpowering I almost never use it when cooking unless I want the dish to be red bell pepper flavored. That said, red bell pepper is delicious for dipping in hummus and other things, and adds a nice fresh, sweet crunch in salads. I'd never objectively say one is better than the other though, they just have different uses

As someone who cannot eat peppers (picky eater here, the acidic taste makes me sick), even I know green bell peppers are the go-to for many dishes. Julien was right about red bell peppers being used when you need something mild and sweet (I'm a picky eater, doesn't mean I don't have taste buds tho!). In any beef dish, especially Asian dishes, you often see green bell peppers. I've never seen an Asian beef dish with red bell peppers (or any beef dish with red bell peppers, for that matter). The type of bell pepper you prefer typically depends on what you eat WITH the peppers. Red through yellow are good for, say, a ratatouille dish--but green is not. On the other hand, green is good for meat dishes, but you typically would not use green bell peppers in a dish with white meat (like chicken or turkey). Other times, the color of the bell pepper simply depends on what color your dish needs (if you are into presentation and plating). However, this doesn't mean you can just use any bell pepper for plating; it also has to go well with the dish, or else it will ruin the flavors. And yes, each variation of bell pepper has a distinctly different taste, especially when cooked. My extreme sense of taste and my knowledge of cooking is why I can be confident in my neutral opinion. I don't like bell peppers, but I can't just have an opinion on them without understanding their uses. For some people to say "oh red is better" without understanding what red bell peppers are even used for is like, a guaranteed way to invalidate their own argument. TLDR; Julien is technically right. Green is more versatile, thus it is the superior bell pepper. But also anyone who likes bell peppers is a sinner.
