Great show! I love catching those drum. They are excellent to smoke in my pellet smoker or my charcoal smoker. Just marinate them like you would cold smoking salmon. You have to hot smoke freshwater fish (above 160 degrees for 30 minutes ) due to parasites and worms, saltwater fish can be cold smoked under 100 degrees for a few hours. Some saltwater fish in some areas like Florida have worms, but the same species in California or Panama may not.

When you're fishing the Indiana side of the Ohio, as Chad was, do you need an Indiana fishing license?

It's reciprocal, so either license will work there as long as you're fishing in the river and not in a tributary creek!
