Best way we do our tomahawks is a reverse sear on our traeger. Smoke 220 45min then sear 480 3 min on each side .. VERY VERY JUICY

I just followed this and made the perfect cowboy steak. I swapped over to my Traeger Ranger for the sear and it worked so well. Best meal I had in forever. Thanks for the tips!

Nice! That looks about perfect for my liking, which you're saying is maybe medium! The one thing to keep in mind is the carry over temp as that piece of meat would have between 5-8 degrees. Many forget that and over cook their steak. So for a Medium-rare you should pull that @125 degrees! That looks awesome!!

You made a great video and by the looks of it a great Steak. No offense, I would have stuck with 125. Wasn't sure if I wanted a Traeger or a Weber. I think you just convinced me to get the Traeger and the Grill Grats if the way to go. You can cook Grill and Smoke which is intriguing to me. Keep up the great work.

It really depends on the steak. A ribeye like this benefits from more fat rendering during the longer cook time of medium doneness than medium rare/rare. A NY Strip or Filet would wouldn’t benefit from the longer cooking time because they are so much leaner.

Because I don’t cook to a time, I cook to an internal temperature. Giving you a time is useless unless you have my exact steak, exact thickness, exact grade, grill, pellets, ambient temp, on and on……that’s why!!!

Hi Matt. I know this is an old post, but I was just on the phone with Traeger this afternoon about that exact thing!! Their website says that it goes up to 500°, but all the videos show it going up to 450. They told me that the newer firmware let's it go up to 500゚, so you'd have to update it. Hopefully you found out about it already. 👍 #traegernation

The grates are made of a hard anodized aluminum that conducts heat much better adding 100+ degrees to the set temp. Check out their website for more FAQ's.

It’s more of a tomahawk than a cowboy. Also, none of the fat was rendered down. The Traeger is amazing but not ideal for a full cook. You’re better off smoking until 120 and then searing the fat and steak off on a cast iron or a grill

I didn’t time it, plus even if I had, that didn’t mean yours would be the same due to ambient temp, steak grade, thickness, etc.
