Demon 8 is a great cover. I had (still have somewhere) JLI 16. I thought you said Queen Bee was made out of beans. That would be funny. Superman 10 cent adventure is good. Wolverine 8 is probably the most iconic cover here. New Defenders is nice art, but not a fan of the realistic style in superhero comics, so I feel meh about it. Objectively good art though... just not my flavor for Defenders.

That Last Defenders cover seems familiar. Is it an homage? Alex Ross maybe.

It's common imagery. Certainly predates Alex Ross. Hero with his costume - that's very old. Wasn't there a Flash issue of that? There's an issue, Bronze Age (maybe early 80s at a push)... if it's homaging anything, it's that. I just can't place it. Very iconic cover whatever it is. Hero in the centre with their costume in their hands...
