⬇️English recipe follows⬇️⬇️ 鮮茄雞髀麪 材料: 急凍雞髀2隻 蕃茄4個 蔥1條 上海麪(中麪條)2個 豉油雞汁1支 處理: 1. 雞髀,清水解凍,解凍後,倒去水分,加入粗鹽1湯匙乸10分鐘,去除雪味、腥味,及加入少許鹹味。 2. 雞髀,清水沖洗乾淨,用廚紙索乾。 3. 新的一支豉油雞汁,加入清水一支,倒入煲內。如果用舊的豉油雞汁,加入: a. 片糖1塊 b. 生抽1湯匙 c. 老抽1湯匙 4. 大火煲滾豉油雞汁,熄火,放雞髀浸熟。 5. 蕃茄及蔥,清水洗乾淨。 6. 蕃茄,1開6。 蔥,切粒。 7. 雞髀已浸了15分鐘,夾上碟。 8. 大火再煲滾豉油雞汁。 9. 雞髀,放入豉油雞汁內。 10. 另一邊,大火煲滾1鑊水。 11. 放麪落鑊,大火滾起,冚蓋,熄火,焗5分鐘。 12. 雞髀,用最慢火,浸熟。 13. 豉油雞汁再次滾起,反轉雞髀,熄火,再浸。 14. 上海麪,已焗了幾分鐘,擎乾水,清水沖乾淨。 烹調: 1. 在鑊內加入清水500毫升。 2. 加入蕃茄1個。 3. 加入調味料: a. 茄汁1/3支 b. 糖1湯匙 c. 雞粉1湯匙 大火煮溶蕃茄。 4. 最慢火,浸雞髀,滾起,熄火,冚蓋焗至熟透。 5. 蕃茄湯已滾起,加入麪條至滾起。 6. 加入蕃茄在鑊內。 7. 夾起雞髀,及豉油汁一同放入大碗內。 8. 麪,夾起放碗內,加入湯底及雞髀。 9. 完成,可享用。 Chicken legs noodles in tomato thick soup Ingredients: Frozen chicken legs 2 Nos. Tomatoes 4 Nos. Green onion 1 pc Shanghainese noodles (medium size) 2 Nos. Chicken marinade 1 bottle Preparation: 1. Chicken legs, defrost in tap water. Pour away water after defrost. Season with 1 tbsp of cooking salt for 10 minutes to remove unpleasant smells and add some salty tastes to them. 2. Chicken legs, rinse thoroughly. Dry with kitchen towels. 3. A new bottle of chicken marinade, add in a bottle of tap water, to be poured into a pot. If old chicken marinade is to be used, add in: a. Slab sugar 1 pc b. Light soya sauce 1 tbsp c. Dark soya sauce 1 tbsp 4. Heat up the chicken marinade at high flame. Turn off fire. Soak the chicken legs well. 5. Tomatoes and green onion, rinse thoroughly. 6. Tomatoes, divide each into 6 shares. Green onion, dice in cubes. 7. Chicken legs has been soaked for 15 minutes, put on plate. 8. Heat up the chicken marinade at high flame again. 9. Chicken legs, put into the marinade. 10. Heat up a pot of water at high flame. 11. Put noodles in wok. Heat up at high flame. Cover up the wok. Turn off fire. Leave it for 5 minutes. 12. Chicken legs, cook at low flame until they have been cooked well. 13. The marinade boils up again, flip over the legs. Turn off fire. Soak them again. 14. The noodles, has been soaked for several minutes, drain. Rinse thoroughly. Steps: 1. Add in 500ml of water in wok. 2. Add in 1 No. of tomato. 3. Add seasoning: a. Tomatoe sauce 1/3 bottle b. Sugar 1 tbsp c. Chicken powder 1 tbsp Melt the tomato at high flame. 4. Soak the chicken legs at the lowest flame. Turn off fire when it boils up. Cover up the wok. Leave them until they have been soaked well. 5. Tomato thick soup has been boiled up, put noodles in the soup until it boils up. 6. Add in tomatoes in the wok. 7. Pick up the chicken legs and marinade into a big bowl. 8. The noodles, put into a bowl, add in soup base and chicken leg. 9. Complete.
