Oooooh nice idea... I've been making courgette fritters a lot, but I grate the courgettes, add minced spring onion and chickpea flour, and use a little of the liquid as binder. I'll try this version next time! Thanks 😊

Can you whip any other bean liquid vs chickpea? (I don’t digest them well). I wonder if you could make a sauce with the zucchini juice…
