I made this yesterday and it was great!! I didn’t have a thermometer so I was a bit cautious about making sure it was cooked all the way, but the chicken was very tender and very good. Love your videos!!

If you dont have a thermometer its ok. Just make sure the chicken is springy to the touch, and when you slice the thickest part, it is cooked white. Nothing wrong with a little over cooked chicken, just wait for amazon to give a coupon and get a 20 dollar thermometer.

Looks like black sesame seeds on the rice, and the soup is almost certainly miso. The small plate looks to have an umeboshi (pickled plum) and I think sliced, pickled daikon radish. The only thing I'm not sure about is the white sauce--though I imagine it's dressing of some sort for the cabbage.

Next to thinly sliced cabbage salad is a sesame dressing: www.justonecookbook.com/sesame-dressing/. Japanese panko-breaded fried foods are always served with thinly shredded cabbage salad. I serve with steamed rice sprinkled with toasted black sesame seeds, miso soup, and a small dish of Japanese pickles (pickled plum and radish).

Do you have any suggestions of where I could buy Japan grown rice in the US - either online or any markets that import? Thank you for these videos! My last girlfriend (we would still be together if I was able to move to Japan) is a Professor in Sendai, and she often cooked like this. I've mastered a lot of it but these videos are a great reminder! Question: what do you do with the vegetable oil once you've finished cooking the katsu (chicken or tonkatsu)?

Protip, if you don't want to fry it, you can do it in the oven. Just toast your bread crumbs until deep golden brown with a little olive oil in a pan first so they get crisped up before you bread the chicken/pork. It doesn't stink up the house nearly as bad, a lot less oil used and it's 95% as good as fried.

@@maym479 if you oven bake it, just add a tablespoon of oil to the finished battered chicken. Freeze it for 45 minutes so it is ice cold. Then you can bake it up and it will pretend fry in the oven.

Sorry but I do not like your cutting board, the chicken should not be clinging to the surface like that. I would only cut fruit and veg on that surface. But I like your video and music. I am making this tonight and I like your recipe.
