Recipe: कोळंबीचे कालवण-झणझणीत कोळंबी रस्सा- How to make Kolambi Rassa-Kolambi Kalvan-SmitasrecipeMarathi

Ingredients:
1) 300 gm prawns ( preferably medium sized )-washed, cleaned and deveined
2) 2 Large size=100gms Potatoes -cut into small cubes, with skin
3) 1 Drumstick-cut into 3-4 inch pieces
4) 1 Large=100gms Onion cut into cubes
5) 1 Large=125gms Tomato-cut into cubes
6) 1/2 Cup Fresh coriander Leaves
7) 3/4th Cup=70-80gms Grated dry coconut
8) 2-3 tbsp Malvani masala (as per your spicy taste)
9) 10-12 Curry Leaves
10) 10-12 garlic cloves
11) ½ lemon juice
12) ½ tsp Turmeric Powder
13) 3-4 Kokum rinds
14) Cooking Oil
15) Salt to taste
Steps:
1) Clean the prawns and remove their shells. Also devein them properly. Wash it thoroughly.
2) Marinade the prawns with turmeric powder, salt and lemon juice for 15 mins. Keep it aside.
3) Dry roast grated coconut till it gets light brown in color. It takes 5 mins.Keep it aside.
4) In the same pan, heat 2 tbsp oil.Saute garlic till it gets light brown.
5) Add sliced onions and saute till it gets brown in color.
6) Once onion turn light brown (10 mins on low heat) then add roasted dry coconut (from step 3) and fresh coriander leaves and just give a stir for 1 min. Switch off the flame and let the mixture cool off.
7) Grind the above mixture into a smooth paste. I have used 1/2 cup water while grinding paste. Also, grind Tomatoes in fine puree.
8) In a kadhai(pan), heat 2 tbspoon oil. Add curry leaves. Add Malvani masala and saute for a min. Add the ground masala paste to the kadhai and saute it for few mins. When Masala becomes dry add some water and saute for some more time. Saute it well for 10 mins till the mixture leaves off the oil from side.
9) Add cut potato, and drumstick to the mixture and mix it well. Add 1-2 cups hot water into the mixture as per the consistency required. Cook it on medium flame till first boil.
10) Cook covered for 5-6 mins. Uncover after 5 mins and add prawns and mix well. Cook Covered for 2-3 mins again.
11) After 2-3 mins uncover and add tomato puree and mix well. Lower the heat and cook covered for few mins.
12) After 5 mins of cooking, uncover and add kokum rinds. Tear it with hands before adding to gravy. Finally add salt to taste and mix well.
13) Cook uncovered for 2 mins and turn off the heat. Remove from heat and keep it covered.
Kolambi Kalvan is not served immediately. Serve it after some time.
Serve hot with Tandalachi Bhakari ( Steamed Rice flour flat bread ) and steamed rice.
