Thalassery Chicken Biryani is a flavorful and aromatic dish from Kerala, India. The unique mix of spices, fragrant rice, and tender chicken makes it a favorite. Here's a simple recipe to make it at home:
Ingredients:
500-600 gm chicken (cut into pieces)
2-3 tbsp ginger-garlic-green chili paste
1 tbsp red chili powder
1/2 tsp turmeric powder
1/2 tsp fennel seeds powder
-1/2 tsp cumin seeds
Salt to taste
Juice of 1 lime
approx450/Kaima rice (Govinda Bhog or use short-grain Basmati rice)
2 tbsp ghee (clarified butter)
3 tbsp oil (vegetable or coconut oil)
8 medium size onions, thinly sliced
2-3 green chilies,
2-3 cinnamon sticks
4-5 cloves
5-6 cardamom pods
-1 big cardamom
-1/2 tbsp black pepper
-2 star anise
1 1/2 cups chopped tomatoes
A handful of fresh coriander leaves
Mace
-Nutmeg
Water - for cooking rice and for cooking the chicken
Instructions:
#### 1. **Prepare the Rice**:
Rinse the rice a few times to remove excess starch. Soaked the rice at least for 30mins.
Boil water in a large pot with salt. Add all the spices mentioned in the video.
Add the rinsed rice and cook until it’s about 70-80% done (parboiled).
Drain the rice and set it aside.
#### 2. **Prepare the Biriyani Masala **:
-Take Fennel seeds, Cumin seeds, Black pepper, Star anise, Cinnamon stick, Nutmeg, Cardamom, Mace and dry roasts until fragrant of spices comes out. Then grind them to make powder.
#### 3. **Fry the Onions**:
Heat 1 tbsp of oil and fry the thinly sliced onions until they turn golden brown. Remove and set aside for garnish.
#### 4. **Cook the Chicken**:
In a large pan or pressure cooker, heat 2 tbsp of ghee or 2 tbsp of oil.
Fry the thinly sliced onions .
Add the chicken and cook until the chicken is nearly cooked through, about 10-15 minutes. Then
and ginger-garlic-chili paste.
Add turmeric powder, red chili powder and salt. cover it for 5.-7mins.
-Add chopped tomatoes and roasted biriyani masala. Let the mixture cook until the tomatoes soften and the oil begins to separate.
-Then add little sugar to it.
Then add coriander to it.
let it simmer until the chicken is tender and the gravy thickens.
#### 5. **Layering the Biryani**:
In a large pot, begin by adding a layer of cooked chicken and gravy at the bottom.
Then layer the partially cooked rice over it. Sprinkle Biryani masala, coriander leaves, and some fried onions.
If using ghee, drizzle it over the rice for aroma.
#### 6. **Dum Cooking**:
Cover the pot tightly with a lid. You can seal it with dough to trap the steam (optional).
Cook on low heat for about 20-25 minutes, allowing the rice to absorb the flavors of the chicken and spices.
#### 7. **Serving**:
Gently fluff the biryani and serve hot with raita or a simple salad on the side.
