Hi Kabita, I am big fan of your recipes. I am Kashmiri Pandit, this is authentic dum aloo recipe. However, you may boil the potatoes and then fry the potatoes. This is something I have seen my grand mom and mom cooking in same pattern. This is authentic Kashmiri dish. In any of the Kashmiri dishes we never use onion or tomatoes. If someone is adding, it means they are unaware of authentic way of cooking

We dont use turmeric (haldi) and cashews in authentic kashmiri dum aloo recipe. For thickening the curry you may add extra spoons of fennel powder. 🙂hope this helps . Also javithri and jaiphal are not used 😌

You have missed one important step. The potatoes have to be boiled first with 2 whistels in a pressure cooker and then pricked with a folk or a tooth pick once they get cold. For best results wash them with cold water after boiling. The potatoes should be fried on a low flame till the potatoes are crispy inside out. This ensures the gravy goes inside the potato. You can also put the gravy and potatoes in a pressure cooker once the gravy is ready and the potatoes are fried well. The Dam Aalo will be ready in 4-5 whistles. For best results you should leave it overnight and have it the next day. You will see that the gravy has gone in every part of the potato.
