Cut the chicken into 8 pieces and clean.
Heat a pan with ghee and cooking oil.
Add onions, cinnamon stick, cardamom, cloves, and bay leaves. Stir until the onions are golden brown.
Stir in garlic and ginger.
Add the chicken and stir.
Add tomatoes and cover until they soften.
Stir in tomato paste, black pepper, turmeric powder, cumin, coriander, Arabic masala, cinnamon powder, and cardamom powder.
Pour water into the pan and add hot pepper and dried lemon. Cook for 30-40 minutes.
When the chicken is cooked and there's little water left, add rice. When the mixture starts to boil and the water is almost gone, cover the pan with aluminum foil and cook on very low heat for about 5 minutes,Your delicious Kabsa Chicken is now ready to serve.
