Cream of Corn Soup
Ingredients
Cream of Corn
• Butter 1 tbsp
• 1 cup of corn kernels
• 1/2 cup milk
Soup Ingredients
• Butter 1 tbsp
• Ginger paste 1/4 tsp
• Garlic paste 1/4 tsp
• Onion 1/4 cup, chopped
• Carrot 1/4 cup, chopped
• Peas 1/4 cup
• Chicken cube 1
• Water 2-3 cups
• Vinegar to taste
• Soy sauce to taste
• Hot sauce to taste
• Salt and black pepper to taste
• Some corn kernels for garnishing
Slurry
• Corn flour 3-4 tsp in a little water
Grilled Tandoori Aloo
Ingredients
Marination
• Tandoori masala 2 tsp (I used Shan brand)
• Oil 2 tbsp
• Ginger paste 1 tsp
• Garlic paste 1 tsp
• Paprika powder 3/4 tbsp
• Salt to taste
• Turmeric powder 1/2 tsp
• Coriander powder 1.5 tsp
• Cumin powder 1.5 tsp
• Garam masala 1/2 tsp
• Dried fenugreek (methi) 1.5 tsp
• Thick yogurt 1/2 cup
• Gram flour (besan) 1 tbsp
• Red food color 1/4 tsp
• Lemon juice 2-3 tbsp
Other
• Potatoes 700 grams, (you can use baby potatoes too)
• Bell peppers red and green, cut into big cubes
• Oil for grilling
• Skewers
Wheat Kulcha On Stovetop - “On a Non-stick Tawa using Kulcha Glue”
Ingredients
• Wheat flour (Aata) 4 cups
• Active dry yeast 1 tbsp
• Sugar 2 tsp
• Salt 1 tsp
• Luke warm milk 1.5 cup
• Corn flour 3 tsp mixed in 1/4 cup water
• Oil 3 tsp
• Luke warm water for kneading
Kulcha glue (Slurry)
• Wheat flour 4 tsp
• Water 1/4 cup
• Brush for applying kulcha glue
Topping
• Dried coriander
• Butter
Creamy Chicken Tikka Curry
Ingredients
Marination 1
• Boneless chicken 1 kg
• Lemon juice 2 tbsp
• Salt 3/4 tsp
Marination 2
• Yogurt 1/2 cup
• Dried fenugreek (methi) 2 tsp
• Tikka masala 2 tsp
• Kashmiri chili powder or paprika powder 1 tsp
• Turmeric powder 1/3 tsp
• Garam masala 1 tsp
• Coriander powder 1.5 tsp
• Cumin powder 1 tsp
• Ginger paste 1 tsp
• Garlic paste 1 tsp
Gravy
• Oil 1/2 cup
• Cumin seeds 1.5 tsp
• Black cardamoms 2
• Bay leaves 3
• Onion 1 big (blended into a fine paste using a little water)
• Green chili 1-2 copped
• Ginger paste 1 tsp
• Garlic paste 1 tsp
• Tomatoes 3-4 big, (blended into a fine paste using a little water)
• Salt to taste
• Red chili powder to taste
• Turmeric powder 1/2 tsp
• Cumin powder 1/2 tsp
• Coriander powder 1 tsp
• Whisked yogurt 4 tbsp
• Tomato paste 2 tsp (optional)
• Kashmiri red chili 1 tsp (optional)
• Water 1 cup or more
• Fresh cream 1/2 cup
Garnish
• Fresh coriander chopped
• Fresh green chilies chopped
• Fresh cream
