° PLUM CAKE RECIPE °
Mix the dry ingredients, 200g flour, 1/2 tsp salt and 2 tsp baking powder in one bowl
Beat 85g of unsalted butter, softened and 100g sugar until light and fluffy
add in 2 eggs and 1 tsp vanilla extract
add in dry ingredients and 80 ml of milk
alternate adding each in 4 sections , don't over mix
combined 40g of butter, 50g brown sugar, 2 tbsp of ground cinnamon and 1 and 1/2 tbsp lemon juice in a sauce pan until caramelised
Slice the plum
Arrange the slices in a single layer, creating concentric circles
Pour the brown sugar mixture over the arranged plum slices.
Pour the batter evenly over the plums.
Then, place the cake in the preheated oven ( 375° F ) and bake for 40 to 45 minutes,
or until a toothpick inserted in the center comes out clean.
Once baked, allow the cake to cool in the pan for 5 minutes.
