BEEF HALEEM Written Recipe :
Ingredients :
Beef boneless 1 kg
Beef stock 4 cups
Chili powder 2 tsp
Turmeric ½ tsp
Onion chopped 1 cup
Clarified butter 1-1/2 cup
Wheat soaked ½ kg
Barley soaked 250 grams
Gram lentils soak 250 grams
Ginger garlic paste 2 tbsp
Allspice 1 ½ tbsp
Salt 1 tbsp
Milk 1 cup
Coriander leaves 4 tbsp
Brown onion 1 cup
Ginger sliced 2 tbsp
Green chilies chopped 6
Ingredients for tempering:
Onion chopped ½ cup
Clarified butter ½ cup
METHOD :
Boil beef with the giving seasonings till done, and blend. Soak wheat overnight, boil with turmeric, salt, chili powder till done, do this with barley and grams lentils. Heat ghee 1 cup, add large sliced onion, fry till light golden, add in all the dry seasonings with ½ cup water, add in the boiled beef, then add in the boiled blended wheat, blended barley , and boiled blended gram lentils , add leftover stock, hot water 4 cups, allspice 1 tbsp, cover and cook or stirring from time to time, add milk, keep grind , add in little little water, cook till well grind . Lastly give tempering with sliced onions, pour on top of haleem, serve garnished with chopped hara masala, ginger julienne, allspice powder and lemon.
KALI MIRCH KARAHI Written Recipe :
Ingredients :
Boneless chicken cubes ½ kg
Yogurt 1 cup
Crushed black pepper 1 ½ tsp
Cream 4 tbsp
Ginger sliced 1 tbsp
Butter 4 ounce
Cumin roasted and crushed ½ tsp
Salt 1 tsp
Clarified butter 2 tbsp
Onion chopped 1 cup
Ginger garlic paste 1 tbsp
METHOD :
Heat ½ cup ghee, add chopped onion with ginger garlic paste, fry well, add yogurt, fry well, add salt, crushed black pepper, chicken and fry, add cream, crushed cumin, ginger julienne, leave it on dum, then garnished with cream , ginger julienne and butter .
