John, what's really great about the Kamado Joe is that if you follow some basic guideline, it make anyone a grill master. Thanks for sharing all these ideas! I save every one for reference.

I have really enjoyed your videos. What I would find helpful as a beginning grill user, is the temps and times in the section you post your recipient above. I know these are not set in stone but it would be helpful. I keep rewinding to find the info. (Guess I could write it down as you say it... ). Just a thought.

What I find interesting is that when I do tri-tip I normally do a reverse sear. I would not expect the cook time to be over an hour with direct heat. I need to try that next time. I also haven't tried adding a glaze/sauce to the tri-tip and instead just stick with a rub. Something else to try. I'm not a master of tri-tip but some of the good ones I've done have been just amazing. On a funny note, I'm glad the clouds eventually came out because you guys looked pretty sun beaten at the start!

Matt McQueeney it was a hot North Carolina day! This was the first time I had ever done a direct cook on this cut. The graduated crust and slow surface carsmalization was outstanding!!! Give it a go and keep us posted...... Love a good reverse sear though!!!

Eric Gephart not true you can't be a chef by cooking on a ceramic cooker on weekends you would either have to work under chefs in an apprenticeship or go to a culinary school even Pitmasters are not chefs there are people that are Cooks their whole life and darn good ones and make a good living but they're not chefs
