Such a interesting video. I'm going to try this method soon. If you want to light a fire lower in the grill, I recommend putting down a firebrick or two. In a buffering capacity.

I have been doing this for a while as well, if you put water on the side that sticks to Joe, you get much better adhesion and heat transfer from surface, you also get a bit of good char on back kind of like on a wood burning pizza oven.

I have a Blaze Kamado and was thinking about making naan on it. I knew someone beat me to it and here you were…. But I am happy to see your enthusiasm and success. I would urge you to add some baking soda when preparing the dough, that’s how they get those signature volcano looking bubbles and lastly brush some “ghee”= clarified butter right after you take them down from the kamado and before serving. I appreciate you for uploading this video. 👏👏👏

I've been using my ash catcher as a chimney starter to light my charcoal in the kamado.... It works really fast....just stuff a small crumbled paper and light it inside the ash catcher. No more $ spent on fire starters or propane torches. Should be safe, right SD?

i've done this when my dome is frozen shut so no worries. i try to avoid too hot of a fire in the metal so that it doesn't warp but i have not had an issues with a fire starter and or wood chips as the temp never is higher than what it gets naturally when doing something hot like pizza

I've seen some DIY tandoori oven builds on KZbin made with terracotta pots. I wonder if you could just cut the base off one and stick it in the Kamado to use and stick the naan to the inside?

Nice cook. Did you film this yesterday (Dec.11) was pretty windy here too, listed as 65 k wind gusts here but I’m sure a few of those were more than 65. Yes I had my Joe Jr going during that, any day is a good day to Grill 🥶🇨🇦 although -40 does make it interesting. I remember before having my Kamado grills being out BBQing & having the wind blow out the propane BBQ. Soon after I got my first BGE we had a really good windy day 80k wind gusts, so I fired up the egg & it really didn’t make any difference in performance…no issues grilling when windy. I’ve made naan style bread a few times using pizza dough & just placing them straight on the grill, works great.

When I heard about cooking naan on the dome, I thought it would be a gimmick. However, it seemed a lot easier and more practical than I first thought. it looks like a ton of fun! and that chicken on the skewer looked like such a fantastic method to cook. The wind has been brutal. I woke up with the cover blown off the joe again.

Could anyone please answer this question: If you use the charcoal basket, can you remove the fire grate (that metal piece with the holes on the bottom)? My son says that removing that will give us better air circulation when we want a REALLY hot Joe - like for wood fire pizza. I’m afraid to remove it… Thoughts?

Great video. I managed to turn my Kamado Joe Jr into a makeshift tandoor - got the dome nice and hot, removed the daisy wheel, and managed to hook 2 hanging skewers at a time through the hole in the top. Results were amazing. Also if you don’t have a new or recently cleaned dome, the naan came out very nice putting the pizza stone over direct heat and using that as the ceramic surface

OK, that was much cooler than I thought it would be. I had seen the other naan video you referenced and it didn't inspire me to try it, though it was interesting. Is there an easy way to spot-clean the back of the dome if I get a hankering for naan, but don't have time for a lengthy high-heat cleaning cycle? I'm guessing there is not.

I tried both the dome and the soapstone with my friend from India. We all preferred on the soapstone because it cooked faster, leaving the bread more moist. That said, maybe my grill wasn't hot enough to do it in the dome, those turned out too crispy for what naan should be.

This is what I do and it works very well. A good tip is to plug the bottom with a piece of potato which helps to prevent the chicken from sliding off.

been doing this for years in my vision grill. what i do is completely remove the dome vent, i don't know if your able on a joe but with long skewers you can rest the tips on the fire box on an angle just like a tandoor, this way you are not burning your gasket with the skewer. works awesome.
