There shouldn't be any confusion between the Lotus Stem and Lotus Roots. What our lady chef is preparing is the underground stem which is underneath the bottom of the pools,lakes,marshes etc. but never in running waters like rivers, streams , brooks etc. The roots are in the nodes only and never in the underground stems.
