What string works best?! I tried making one before with elastic string & the chocker ended up sinching up :(

I use a cloth covered elastic. You could try fishing line.

i love fishing line for projects that dont stretch, as long as you tie the knots tight

You can start the pattern with 2 rows instead of 4.
