Himachal ke Swad : Episode 2
We are starting with the Kangra dham special "Safed chane ka Madra"..
With Love all you need
👉1 cup white chickpea (safed channa), soak overnight. In the morning, rinse water, add channa in cooker, half tsp salt and turmeric powder and cook it for 5-6 whistles
👉Take 3 cup curd, make sure it's fresh and not sour (otherwise balance the sourness with 1-2 tsp sugar). Add in curd, 1 tsp salt, turmeric powder, chilly powder, deggi chilli powder, garam masala, besan (chickpea flour) and fennel powder. Mix all well
👉Take a pan or kadhayi, add ghee, add whole spices including 2-3 green cardamom, black pepper, clove, 1 black cardamom, cinnamon piece, bay leaf, mace pod (javitri), cumin and coriander seeds. Heat them and then slow the flame
👉Add mixed curd, mix it well untill it starts boiling. Now add in dry fruits, raisins, cashew nuts and coconut chunks or powder. Mix well. Let it simmer for 5-10 min
👉Add boiled chickpea, mix well, cook it for 15-20 mins on slow flame. Add on 2-3 tsp ghee, hand crushed kasoori methi
👉Check for seasoning, balance out salt, sourness of curd if any with sugar and we are ready to serve and relish this amazing recipe 🤤
👉Enjoy with rice or with the bread of your choice
