While I’m in Kansas City this weekend, I figured that I’d share a KC favorite with you.
1 smoked brisket point
Central City BBQ All Purpose Rub, or your favorite bbq rub
1c Sweet bbq sauce
1/2c vinegar bbq sauce
Set up your smoker to 275*-300* for indirect smoking. Cut the point into 1”x1” cubes, then apply the bbq rub to all sides. Place on the cooking rack, and cook for 30 minutes. Remove from the smoker, and toss in the sweet bbq sauce and vinegar sauce, then add to a pan. Smoke them for another 30 minutes, toss around, then another 10-15 minutes. That’s all there is to it.
