A classic Indian dish! Here's a simple recipe for Karela Gosht (Bitter Gourd and Mutton Curry):
Ingredients:
For the curry:
500g mutton or lamb, cut into small pieces
2 medium karelas (bitter gourds), peeled and sliced
2 medium onions, chopped
2 cloves garlic, minced
1 teaspoon ginger paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt, to taste
2 tablespoons vegetable oil
2 tablespoons lemon juice
Fresh cilantro, chopped (optional)
For the masala:
2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon fennel seeds
2-3 dried red chilies
Instructions:
Step 1: Prepare the karelas
1. Soak karela slices in salt water for 30 minutes.
2. Drain and rinse.
3. Squeeze out excess water.
Step 2: Cook the mutton
1. Heat oil in a pan over medium heat.
2. Add cumin seeds and let sizzle.
3. Add onions and cook until translucent.
4. Add ginger paste and garlic. Cook for 1 minute.
5. Add mutton and cook until browned.
6. Add coriander powder, garam masala powder, turmeric powder, and chili powder. Mix well.
7. Cook for 10-15 minutes or until mutton is tender.
Step 3: Add karelas and masala
1. Add karelas to the mutton mixture.
2. Grind the masala ingredients into a fine powder.
3. Add the masala powder to the curry.
4. Mix well and cook for 5-7 minutes.
5. Season with salt and lemon juice.
Step 4: Serve
1. Garnish with chopped cilantro (if using).
2. Serve with rice, roti, or naan.
Tips and Variations:
Use lamb or beef instead of mutton.
Adjust spice level to your taste.
Add potatoes or other vegetables.
Use different types of bitter gourds.
Serve with raita (yogurt and cucumber sauce) or salad.
