Bring on Gallon of water to boil. Add in half a jar (8oz) of Kary’s Dark Roux.
Dissolve for 30 minutes.
Add 3lbs of cubed, seasoned Chicken to the gumbo pot.
Add one pound of sliced smoked sausage.
Chop 2 stocks of celery, 1 bell pepper, and 1 large onion, and add to gumbo pot.
Add in 2 cloves of minced garlic.
Add cajun seasoning or hot sauce to taste.
Stir and simmer for 1 and 1/2 hrs.
Serve over rice.
