⏩Ingredients for cookies (40 to 44 Tapas, 20 to 22 cookies):
110 gr of butter without salt.
70 g of icing sugar (1/2 cup - 2 tbsp) + 10 g of vanilla sugar (1 tbsp) or 80 g of icing sugar + 1/2 tsp of vanilla essence.
2 Egg Yolks at room temperature (33 gr).
170 gr of all-purpose flour (1 1/4 Cup + 1 1/2 Tbsp).
30 gr of almond flour (4 Tbsp).
10 gr of Maicena or corn starch (1 Tbsp +1 tsp).
1 gr of salt (1/4 tsp).
For the filling:
Raspberry jam or the one you like the most.
⏩Tips and Recommendations:
1. You can also cut the cookies into squares, circles and make the design that you like the most.
2. You can store the dough in your refrigerator overnight, but in that case take it out of the fridge a few minutes before using because the dough will be quite firm when you take it out of the fridge and you won't be able to cut it, but don't leave your dough too long either outside because your cookies can lose their shape.
