Sous vide is the best way to do chicken thighs. Season it and vacuum seal it with butter then do 170F for 2 hours. It's so tender and delicious.

@@CarolCurotto there's a bunch of sous vide machines. You'll also need a large Cambro bucket that can take high heat. Some of them like the newer Anovas require a yearly subscription to use all of the features. But I have a Ninja crockpot that has a sous vide option. If you don't have a crockpot I'd get one of those. You'll also need a vacuum sealer. Costco has one for 100 bucks. Also buy a box of Kirkland vacuum bags while you're there. The vacuum sealer will pay for itself because you can buy meat in bulk when its on sale and seal them. It lasts longer and will retain better quality than freezing in ziploc bags. When I buy meats I season it all when I get home and seal it all. Leave it in the fridge for 24 hours to let the seasoning do its thing, then freeze what you're not using immediately. You can sous vide straight from frozen too. Just add an extra 30 minutes or so.

@@CarolCurotto also check out the sous vide subreddit. There's lots of info and tips there. I also use sous vide for making potato chunks. Add seasoning and butter before sealing. You'll also want to get a cast iron pan to sear the meats after the sous vide. Put the bag in an ice bath after finishing then sear. This helps to prevent overcooking. I run hot water over the bag after taking the meat and potatoes out to melt the fats then pour it into a container. The seasoned juices and fats are great to make rice with.

Thrombocytopenia = low platelets (stuff that helps you clot). I think yall were thinking of Polycythemia Vera. Didn't realize dogs could get this. I have more questions. Like, what kind of dog? How much do they take out? What's the red blood cell count have to get to before bloodletting is done??

@@CarolCurotto Unlikely, treatment for thrombocytosis is not bloodletting. That can be managed in other ways, usually through meds. If it’s an emergency they could do plateletpheresis. On the other hand, depending on the type, erythrocytosis (polycythemia) can be treated with bloodletting in conjunction with meds. Or as she said it, “transfusing out blood”, or something like that.

@@CarolCurotto As a nurse of almost 20 years you should’ve known that thrombocytosis is elevated platelets not RBCs which is what she was describing. If you took the time to look up what erythrocytosis was you’d see that the symptoms she described matched symptoms for polycythemia. Your experience in Neuro ICU does not equate to working in a hematology clinic or floor. Those are completely different specialties. Yes, bloodletting is an antiquated method of treating patients but in VERY rare and SPECIFIC situations it has been done in modern times. Studies are still being done on therapeutic phlebotomy, AKA bloodletting. Now we have medications to suppress the production of RBC and other advanced procedures. What I want to point out is that we were talking about dogs NOT humans. While it not common on animals either, it is still done. In fact, there have been papers written about the procedure in the last 5 years. You’re retired so I dont expect you to keep up with literature but as a nurse still practicing and pursuing advanced training I run across interesting studies all the time.
