I think Kingpin didn't go all out on Kate for the same reason I believe he spared Maya. He made deals with a parent to protect their family, and the parent betrayed him so they have to die, but the deal still stands so he'll protect their family unless they betray him too. I like to think that Kingpin has the view that a man's word is his bond. He's a businessman, being able to trust his word is important to him. It's a twisted form of honour, this code he abides by. He gave his word to protect Maya/Kate, so he will unless they force his hand. Not to mention, he never wastes a resource. He finds ways to turn enemies into allies or unwilling minions. He killed Maya's father but she became one of his best underlings. He may have hoped Kate could likewise become one of his people.

@@Dmog97 Considering the Daredevil series is now officially MCU canon, my best guess would be his durability improved over time, beating after beating, making his power set way more comic-accurate than before. Let's not forget that there's a huge time span between the Daredevil series & the Hawkeye series. I'm glad they went this way, build up his power set & character until he's abso-f***ing-loutely ready to take on MCU Spider-Man in Spider-Man 4 eventually.
