Amazing recipe Brishti! Thank you for bringing the flavours of Jharkhand. Will definitely try this recipe. In coastal Karnataka and Kerala we have different varieties of Jackfruit and make a variety of dishes with both unripe and ripe jackfruit. Even the seeds of the ripe jackfruit are used in many dishes. The leaves of the jackfruit tree are used to make a cup-like structure to hold the idli batter and steamed to make kadubu. In other words we celebrate jackfruit in all forms. Thank you for adding another recipe into our jackfruit collection! The fryums that you fried are called "sandige" in Karnataka. Again there are 100's of recipes of them.

From kerala..Palakaad. Kerala is famous for jackfruit.. We make this tender jackfruit, totally different method. No masalas are used.Only coconut,green chilli & curry leaves & in pure coconut oil. Tender jackfruit is called *idichakai* & the dish is called *idi-chakai- podu-thooval*
