Wish there was a way to make this lactose free without using soy/rice/hemp milk...I've had all those milk substitutes and they just taste horrible. I use lactose free milk since it tastes just like milk but no lactose! But I bet they don't make lactose free condensed milk or heavy whipping cream >.

You can make your own condensed milk! So you could make it from lactose free milk. The original designer of this recipe is Gemma Stafford, she has a youtube channel and she has a recipe for making your own condensed milk.

How about coconut milk? I love the taste of it, I actually made whipped cream with it once and I thought it was better than regular whipped cream! You have to buy the can though, not the carton stuff. You should also chill the can for several hours first.

If you add few spoons of jell-o powder instead of simple coloring gel, you can have a rainbow of colours with a rainbow of flavours (it's a good rainbow Sherbet imitation too). Also, I don't know what a "birthday cake" taste like but as a rule, it's better don't serve uncooked flour to people; if you can replace it with some similar artificial flavour, your ice-cream will also be glutin free for the joy of all glutin intollerant guests :-)

I made this today, before it set, it tasted like the condensed milk, but once it's frozen, ITS THE BEST THING EVER! better than buying it in my opinion, I recommend adding a bit more cake mix for the birthday cake flavor :)
