First, he washed the grains with tap water that probably has chlorine. Then he used metal strainer. Then he dropped some grains and dunked it in the jar. 😂

filtered tap water is ok , stainless steel strainer also is ok .its not react with kefir milk.

That strainer is stainless steel, I have the same one. It’s perfectly fine using that to filter.

Really interesting My experience is that if you use too many grains it ferments very quickly. Which is easily done as the grains multiply with each fermentation. Yes if reduce the temperature by placing them in the fridge it will slow the process down but it better to reduce the quantity of grains to 10gms (2 tsp ) per 250 ml of full fat milk. I keep the excess grain in the fridge to start a second batch or give to friends etc. A drop of cream a the start thickens the Kefir and I have not problems with stainless steel spoons/sieves but always use glass for processing and storage. Now experimenting with nut based milks. 👍

From my understanding, over fermenting also stresses the grains, as it means they ran out of food.

Thanks for this! I’m new to kefir grains have consumed the commercial stuff in the past but want to make my own as it’s even healthier and not pasteurized and will have even more probiotic bacteria

I currently do two types of yoghurt Matsoni yoghurt from the country of Georgia. My first shipment of Matsoni starter arrived DEAD. So I had been watching videos about LABS (Lactic Acid Bacteria Serum) and also known as KNF (Korean Natural farming) I needed yoghurt desperately but thermophilic yoghurt was too complicated and needed too many things I couldn’t do. I was living in in a 20 foot long RV. I simply didn’t have the space. So I caught wild bacteria in rice wash water and it fermented excellent yoghurt at room temperature that worked every bit as well for my health as homemade Bulgarian yoghurt. It just took a lot longer 36-48 hours to ferment instead of the 14?hours Matsoni promised. So now I have two yoghurts Matsoni, and the one I call (my gift from the universe” thanks to these my digestive disorder is under control and can live a normal life after 18 years.

Do you still share your kefir grains? I stored mine for about 45 days and now all I get is a VERY thick slime. I’ve done kefir for a couple of years but I’ve never seen this before.

Can you give an reason for washing your grains? Sorry. Got it. Have you ever noticed a test to any difference in flavor between using metal vs. plastic/silicone utensils? I understand there are issues with using metals with kefir. I would to take your offer of grains, assuming you more.

People usually recommends to use something that is not metallic because the acidity of the kefir could react to it. However, since it doesn't stay in contact for that long, maybe "the damage" produced by the reaction is not strong enough to cause any irreversible chaos. I think we can survive the 10 secs metallic strainer "contamination". (But this is my humble opinion, and I could be wrong)

I just can’t right now. That is way too many grains for that amount of milk. Of course it overferments. I wouldn’t have added the fallen grains. Not sanitary. Especially next to the sink. You wear gloves but yet you picked up the grains that fell and put them back in. 🤮🤮

OMG! You've ruined those beautiful grains!!!! You never wash them in water as it removed the healthy layer coating the grains. :-\
